This comment is more of a question - and one not related in any way to Middle Dutch cookery.
I am currently doing some research into the Norwich Bridewell (House of Correction), founded in the 1580s. Of course my part of the world at this period was very much interconnected with the low countries. Do you know if the low countries had similar institutions at, or before this period?
Hi Colin - I must have missed the "notification" of your comment. There certainly were houses of correction in the Low Countries, but the oldest I'm aware of was that of Amsterdam, founded 1596.
